Pine bark is certainly a promising peat alternative for some of the carnivorous species, mainly Sarracenia I believe. It might work fine for c&s? https://melcourt.co.uk/products/growbark-pine/
I've used a similar Melcourt product on the past (fine composted bark) to open up peat based composts and improve drainage. Unless this stuff is a lot more composted it would be a lot sharper drainage than peat. Not too much of an issue for carnivorous plants sat in water or perhaps C&S though.

I don't think coir can really be used as a straight swap for peat.
I've used ericaceous peat-free compost for peat- they're typically a mix of coir and bark products.
