Where has my spiral gone?!

I came across this plant yesterday. Always been intrigued by the spirals - how some go one way, some the other, and some changing their mind part way up.

Tried to find info about them on the net but didn't find anything helpful - if there is I didn't choose the magic words for the search!

Any practical experience with these, helpful speculation and pointers to web information welcome!

Why has it lost it's spiral? Any known cause, or do they just sometimes do this?

Any chance that it will regain the spiraling? I know they start straight and only start their spiraling after a few inches so might that apply here?

If I behead it, will the spiral produce offsets which will eventually spiral?

Any other useful information welcome. The label says Cereus jamacaru spiralis but no doubt there will be different opinions about the name!
