in order to limit the temperature from going very low in winter, you can insulate the northern part of your tunnel and you can use water tanks (like barrels) under your shelves on the shadiest side of your tunnel, it can be quiet efficient specially with sunny daytime. The problem is the water drops (due to condensation) falling on the plants.
